Outlaw steel mimics Steel Challenge that's a division within USPSA. Steel challenge involves a few "standard" courses of fire that include several stationary pieces of steel with a total of 5 rounds per stage. Usually there are 5 pieces of stationary steel setup in certain arrangements (an example would be Accelerator http://steelchallenge.com/wp-content/uploads/2007/12/accelerator.pdf). You shoot each stage five separate times. Each time you shoot the stage is considered a "string". When the buzzer sounds you shoot in whatever order you want, but the stop plate has to be shot last. The stop plate stops your time. If you shoot the stop plate before engaging all the other targets first you are given a penalty (Time added). Your time to engage the steel is recorded for each string, and your worst time of the 5 is thrown out. So you end up with 4 scored strings for each stage. Those 4 strings are totalled together to give you your score for that stage. Your total times for each stage are then totaled to determine your score for the match.
What makes our steel matches "outlaw" is that we don't always use Official Steel Challenge stages. The match director usually mixes in a couple of home brew stages of his own, or some that other competitors have dreamed up. Sometimes it may be a field course where we shoot the texas star and some falling steel, or something else.

As for clash of metal. Clash of metal is a man on man competition. 5 falling steel targets per person are setup, for a total of 10 falling targets across the entirety of the line. The 2 center targets are crossed so that one falls on top of the other. Each shooter stands in their respective shooting box. When the buzzer sounds, their goal is to drop their five plates before the other competitor can. We shoot best 2 out of 3. If you lose, you get an X on your name, and as of right now, 3 X's puts you out of the competition. This continues until it's whittled down to the last two competitors, and they face off for however long it takes to eliminate one or the other.

Hope that helps, without being too confusing.
